Hello! I’m Amy Knox, a weight-inclusive, integrative nutritionist specializing in supporting women with metabolic concerns. Based in southern Illinois, I take a Health at Every Size® (HAES) approach, helping clients improve their health without focusing on weight loss. My passion lies in guiding women to reconnect with their bodies, address metabolic challenges, and cultivate a positive, balanced relationship with food.
I earned my undergraduate degree from the University of Tennessee-Knoxville and a master’s degree in Nutrition and Integrative Health from Maryland University of Integrative Health. My professional journey began in Washington, DC, where I worked in both a seed-to-table program for public schools and an integrative healthcare practice in Maryland, blending my love of sustainable food systems with a holistic approach to health.
After relocating to the Midwest, I completed an organic farm apprenticeship, which deepened my commitment to sustainable food practices. Today, I incorporate this perspective into my work, fostering a connection between nourishing food and overall well-being. I also manage the community garden at Empowered Spaces in St. Louis, collaborating with programs like Jamaa Birth Village to enhance access to fresh, organic food.
When I’m not working, I enjoy life just outside St. Louis with my husband and 5-year-old daughter. The Midwest has become my home, and I am grateful for the opportunity to serve this community. Let’s work together to support your metabolic health and well-being—on your terms.
